Background Story:
It’s so simple but surprisingly extremely delicious. Me and my family couldn’t stop making it all summer once we discovered it. It’s…..grilled eggplant.
Recipe:
Ingredients:
- 1 large eggplant
- Approx. 1/3 cup olive oil
- Lemon pepper
- Supplies you need: a BBQ, a baking sheet, a brush for the olive oil
Instructions:
- Wash the eggplant
- Slice it into circles, about 1/4 inch thick
- Brush both sides of the eggplant slices lightly with olive oil and lay them on the baking sheet
- Lightly sprinkle lemon pepper to taste on one or both sides, it’s up to you, but in my experience its very easy to over do it!
- Now grill the egg plant for around 4-ish mins on each side or until it has grill marks and its soft yet crispy without being burnt or completely falling apart.
