Grilled Eggplant – Fiyafly

Recipes by Request : a play on what happens during a DJ’s set… combining my love of cooking with the featured guest DJ.


Background Story:

It’s so simple but surprisingly extremely delicious. Me and my family couldn’t stop making it all summer once we discovered it. It’s…..grilled eggplant.



  • 1 large eggplant
  • Approx. 1/3 cup olive oil
  • Lemon pepper
  • Supplies you need: a BBQ, a baking sheet, a brush for the olive oil


  1. Wash the eggplant
  2. Slice it into circles, about 1/4 inch thick
  3. Brush both sides of the eggplant slices lightly with olive oil and lay them on the baking sheet
  4. Lightly sprinkle lemon pepper to taste on one or both sides, it’s up to you, but in my experience its very easy to over do it!
  5. Now grill the egg plant for around 4-ish mins on each side or until it has grill marks and its soft yet crispy without being burnt or completely falling apart.
  6. Enjoy!
