Background Story:
This is what I bring to Thanksgiving, Christmas, a pot luck, or any event. I love this recipe especially because it’s so easy, yet so flavorful. I feel like Mac and Cheese brings anyone together. It’s such a hearty dish, I usually take a nap after a big side of this special Mac n Cheese.
Hope you try it, enjoy it, and tweak it if you want to get creative!
Recipe:
Ingredients:
- 1 16oz box elbow macaroni
- 4 tablespoons butter
- 16oz shredded extra sharp cheddar cheese
- 8oz shredded Monterey Jack cheese
- 24oz evaporated milk
- 2 eggs
- 1/3 cup milk
- A few dashes of hot sauce
- 1 teaspoon garlic powder
- 1 teaspoon seasoning salt (I use Lawry’s)
- 1 teaspoon pepper
- Paprika
Instructions:
- Pre-heat your oven to 375°.
- Start with boiling your box of elbow macaroni, and sprinkle some salt in to help cook faster.
- While that’s boiling, mix your wet ingredients: I start by scrambling my eggs in a medium bowl. Then, I slowly add in the evaporated milk and regular milk whilst continuously whisking.
- Once that’s all mixed, I add in the garlic powder, seasoning salt, and pepper. Then whisk until everything is incorporated.
- In another bowl, combine your cheeses thoroughly.
- By now, your noodles should be al dente. Drain them, then put them back into the same pot you boiled them in.
- Add your 4 tablespoons of butter into the pot, and coat all your noodles in it.
- Next, grab a 9×11 baking pan and grease it with some butter.
- Add 1/2 of the buttered noodles.
- Then add 1/2 of the cheese blend we created.
- Then add the last half of the noodles, and the last half of the cheese.
- Lastly, pour your evaporated milk mixture evenly over the noodles, and lightly sprinkle paprika over everything.
- Bake for 35-40 minutes in the oven (I cook mine for about 45 minutes because I like my cheese a wee bit burnt).
- Let it cool for 10-15 minutes, throw some hot sauce on that thang, and enjoy!
