Lechon (Filipino Crispy Pork Belly) – Neil V

Background:

“I chose this recipe because it’s one of my favorite Filipino dishes. I was born in the US but my parents immigrated from the Philippines. They raised me as a kid eating Filipino food everyday.”

Recipe:

Ingredients:

  • Pork Belly
  • Salt
  • Whole Black Pepper

Instructions:

  1. Cut pork belly into 2-3 inch strips
  2. Boil pork belly in salt and whole black pepper in a large boil pot for 45 mins to 1 hour (until pork is tender)
  3. Preheat over to 450 while pork is boiling
  4. Once the pork is tender remove from pot and place on a baking sheet with a rack for the pork to sit on, fat side up
  5. Poke holes in the pork belly
  6. Place pork belly in the 450 and cook until it’s crispy
  7. Remove from oven and let it rest for about 5 minutes
  8. Cut the pork belly into cubes and serve
  9. Enjoy!

Notes:

Usually it’s fried instead of baked but I like to pretend that it’s somewhat healthier if I bake it. It’s best to dip it in lechon sauce. You can buy it from the Asian store or even Amazon. My favorite is called Mang Tomas All Purpose Sauce.
