Background:
“I chose this recipe because it’s one of my favorite Filipino dishes. I was born in the US but my parents immigrated from the Philippines. They raised me as a kid eating Filipino food everyday.”

Recipe:
Ingredients:
- Pork Belly
- Salt
- Whole Black Pepper
Instructions:
- Cut pork belly into 2-3 inch strips
- Boil pork belly in salt and whole black pepper in a large boil pot for 45 mins to 1 hour (until pork is tender)
- Preheat over to 450 while pork is boiling
- Once the pork is tender remove from pot and place on a baking sheet with a rack for the pork to sit on, fat side up
- Poke holes in the pork belly
- Place pork belly in the 450 and cook until it’s crispy
- Remove from oven and let it rest for about 5 minutes
- Cut the pork belly into cubes and serve
- Enjoy!
Notes:
Usually it’s fried instead of baked but I like to pretend that it’s somewhat healthier if I bake it. It’s best to dip it in lechon sauce. You can buy it from the Asian store or even Amazon. My favorite is called Mang Tomas All Purpose Sauce.
