Background Story:

This is the best appetizer you can make and take where ever you go. Anytime I have had a potluck at work, I’ll make and take this and it’s usually the first thing to go!

Recipe:

Ingredients:

  • 1lb ground meat (beef, pork, turkey, chicken – or whatever meat/non-meat you like
  • 1 package sour cream (8oz)
  • 1 brick of cream cheese (8oz)
  • 1 bag of shredded cheese (whichever you prefer, I use Mexican flavored or at least Colby Jack)
  • 1 can of diced tomatoes and green chilis (OR dice a few tomatoes and spicy pepper for flavor)
  • 1 taco seasoning packet
  • 1 bag (or 2!) of your favorite tortilla chips
  • 1 cake pan/serving dish — 11×7 or 13×9

Instructions:

  1. Let cream cheese warm up to room temperature.
  2. Combine sour cream and cream cheese mixture in bowl, you can either mix by hand or use a mixer (easier). Once mixed, put an even layer on cake pan and refrigerate until later.
  3. Cook ground meat through while following cooking instructions on taco packet.  You can add in SOME tomatoes here if you want, but not necessary.
  4. Once meat is cooled, layer on top of sour cream and cream cheese mixture.
  5. Drain can of tomatoes and layer evenly on top of cooked meat.
  6. Spread an even layer of shredded cheese on top
  7. Put back into refrigerator for 30-60 minutes or so to cool (from the heat of the meat).
  8. Enjoy!

** You can add different toppings/layers. These are what I have always made with it – refried beans, olives, guacamole, etc. **
