Baked Salmon and Asparagus – Key Mitch

Background Story:

The flavors in this salmon recipe are absolutely incredible. A one tray meal to feed a hungry hoard without any stove top to scrub or pans to wash. Can I get an AMEN? Plus, the added bonus of baking it WITH all of your desired vegetables adds to the convenience of a one pan meal without worrying about other pans all over the place, boiling over and over cooking your veggies…or your salmon.

What I love most, is there’s no need for marinating. The flavors are so intense, they are perfect for coating, baking and eating. Smothered with so much flavor with only 2 main flavor ingredients.

Recipe:

Ingredients:

  • Lemon Juice
  • Garlic
  • Salmon Filets
  • Salt and Pepper
  • Parsley (optional)
  • Your choice of veggies — I choose Asparagus.

Instructions:

  1. Preheat your oven to 375 degrees.
  2. In a casserole dish or baking pan (line with aluminum foil if you choose for easy cleanup), place the salmon filets
  3. If you choose asparagus, cut about an inch off the bottom tip and place them in your dish next to the filets. Otherwise, add your veggies in.
  4. Chop/Dice/Mince some garlic to your liking, season the filets and veggies with it.
  5. Slice fresh lemons so you can squeeze the juice on top of the salmon and veggies (watch out for seeds).
  6. Season the dish with salt and pepper.
  7. Season the dish with parsley (optional)
  8. Bake for 8-10 minutes.
  9. Enjoy!
