Chicken with Rice – Augustus Williams

Recipe:

Ingredients:

  • 1/2 cup regular rice
  • 1 can cream of chicken soup
  • Skinless chicken thighs
  • Salt
  • Pepper
  • Celery salt
  • 1 to 2 cups milk

Instructions:

  1. Grease pan.
  2. Spread rice on bottom of pan and season with salt, pepper and a good amount of celery salt.
  3. Mix a little warm water with the cream of chicken soup to spreading consistency.
  4. Cover the rice with the soup mixture.
  5. Trim fat off chicken and lay on top of soup.
  6. Season chicken with salt pepper, and celery salt to taste.
  7. Add milk.
  8. Bake uncovered at 350 degrees for 1 1/2 hours. (Serves 2-3)
  9. Enjoy!

Notes: I usually double the amounts. I usually use 2% milk and the higher amount of milk. For creamier rice, put ingredients together in the morning, cover, and put in refrigerator for 1 to 10 hours. Uncover and bake as directed. You will need a large pan, as it will expand while baking.
