Background Story:
I had a very dear friend of mind bless me with homemade lemon pepper chicken thighs one time last year. As soon as they hit my mouth, it was like my life was changed forever. They are so easy to make and you can cook them a variety of ways too. This has been a staple in my diet since being introduced to them. You can basically use the same recipe for wings or breast too if you prefer different cuts of the chicken. I eat a more ketogenic diet so I have modified the recipe to have no breading.
Recipe:
Ingredients:
- 2 lbs boneless chicken thighs
- 2 teaspoons salt
- 1/4 cup butter melted
- 2.5 tablespoons lemon pepper seasoning
- 2 tablespoons chopped parsley
- lemon wedges and parsley sprigs for serving optional
Instructions:
- In a small bowl, combine the melted butter, lemon pepper seasoning, and salt.
- Place the chicken thighs in the bowl; gently toss to coat with the mixture.
- Heat grill to 350F. (Option 1)
- Heat air fryer to 350F. (Option 2)
- You can also bake them – 450F for 15-20 min for breasts, 425F for 30 min for bone-in thighs, or 20 min for boneless thighs. (Option 3)
- Throw thighs on the grill and flip every 4-5 minutes until golden brown and cooked through. (Option 1)
- Fry for 10-12 minutes or until thighs are deep golden brown and cooked through. Repeat with remaining thighs (Option 2)
- Sprinkle one more dash of lemon pepper seasoning to top the chicken off
- Garnish with lemon wedges and parsley sprigs if desired.
